Hearty Slow Cooker Recipes to Warm You Up

The change of seasons brings cold air—and warm meals! Embrace winter with these easy-to-make slow cooker recipes that provide hearty dishes for the whole family.

Check out our five favorite recipes:

Slow Cooker Honey Garlic and Veggies

Ingredients:

  • 8 bone-in, skin-on chicken thighs
  • 16 ounces baby red potatoes, halved
  • 16 ounces baby carrots
  • 16 ounces green beans, trimmed
  • 2 tablespoons chopped fresh parsley leaves

For the sauce:

  • ½ cup reduced sodium soy sauce
  • ½ cup honey
  • ¼ cup ketchup
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil
  • ½ teaspoon dried oregano
  • ¼ teaspoon crushed red pepper flakes
  •  ¼ teaspoon ground black pepper

Directions:

  • In a large bowl, combine soy sauce, honey, ketchup, garlic, basil, oregano, red pepper flakes, and pepper.
  • Place chicken thighs, potatoes, carrots, and soy sauce mixture into a six-quart slow cooker. Cover and cook on low heat for seven to eight hours or on high for three to four hours, basting every hour. Add green beans during the last 30 minutes of cooking time.
  • Optional: Preheat oven to broil. Place chicken thighs on baking sheet, skin side up, and broil for about three or four minutes until crisp.
  • Serve chicken with potatoes, carrots and green beans then garnish with parsley, if desired.

Slow Cooker Chicken Tortilla Soup

Ingredients:

  • 2 ½ (14.5 ounce) cans low-sodium chicken broth
  • 1 (14.5 ounce) can petite diced tomatoes
  • 1 ¼ cups finely chopped yellow onion
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • ¾ teaspoons paprika
  • ½ teaspoon ground coriander
  • Salt and freshly ground black pepper
  • 1 ½ lbs. boneless skinless chicken breasts
  • 1 (14.5 ounce) can black beans, drained and rinsed
  •  1 ½ cups frozen corn
  • 1 tablespoon fresh lime juice
  •  ¼ cup chopped fresh cilantro

Directions:

  • Pour chicken broth and diced tomatoes into a slow cooker. Add onion, garlic, chili powder, cumin, paprika, and coriander. Season with salt and pepper. Add chicken then cover with lid and cook on low heat for six hours, or until chicken is thoroughly cooked.
  • Remove chicken and shred then return to slow cooker along with black beans, corn, cilantro, and lime juice then stir. Allow to cook until heated through.
  • Serve warm with tortilla strips and cheese.

Slow Cooker Chicken and Dumplings

Ingredients:

  • ¼ teaspoon poultry seasoning
  • ¼ teaspoon paprika
  • ¼ teaspoon pepper
  • 2 cans (10.5 ounce each) condensed cream of chicken soup, undiluted
  • 1 can (14.5 ounce) chicken broth
  • 1 soup can water (use the empty soup can to measure)
  • 2 tubes (10 ounce each) refrigerated biscuit dough, torn into pieces
  • Chopped parsley for serving (optional)

Directions:

  • Place chicken in a slow cooker. Sprinkle with poultry seasoning, paprika, and pepper.
  • In a medium bowl, whisk together soup, chicken broth, and water then pour mixture over chicken in the slow cooker.
  • Cover and cook on high for five to six hours.
  • About 90 minutes before serving, remove the chicken from the slow cooker and roughly chop into pieces. Return the chicken to the slow cooker. Add the torn biscuit dough, pressing down gently to make sure each piece is submerged. Cook until dough is no longer raw in the center.
  • Sprinkle with chopped parsley and serve.

Serving size: 8

Slow Cooker Orange Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • ¾ cup Smucker’s Sweet Orange Marmalade
  • ¾ cup Sweet Baby Ray’s Original BBQ Sauce
  • 2 tablespoons soy sauce

Directions:

  • Cook chicken in crockpot on high for three hours or on low for six hours.
  • Once cooked, drain juices from crockpot.
  • Either leave chicken breasts whole, or remove, cut into cubes, and transfer back to crockpot.
  • Mix BBQ sauce, orange marmalade, and soy sauce together.
  • Pour mixture over chicken and cook covered on high for 30 more minutes.
  • Serve with rice and enjoy!

Slow Cooker Broccoli Beef

Ingredients:

  • 1 1/2 lbs. beef chuck (roast or chuck steak) sliced into thin, 1 1/2-inch long strips
  • 1/2 yellow onion sliced into 2 portions
  • 1 cup low-sodium beef broth or beef consommé
  • 1/2 cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  •  1/3 cup lightly packed dark-brown sugar
  • 3 cloves garlic, minced
  • Salt and freshly ground black pepper
  • 2 1/2 tablespoons cornstarch
  • 3 cups broccoli florets diced into bite size pieces
  • Sesame seeds for garnish (optional)

Directions:

  • Add beef and onion portions to a slow cooker. In a mixing bowl, whisk together beef broth, soy sauce, sesame oil, brown sugar, and garlic. Season mixture with salt and pepper to taste. Pour mixture over beef and onions in slow cooker. Cover with lid and cook on low heat 2 1/2 – 3 1/2 hours, until meat has cooked through.
  • Ladle out 1/4 cup of the broth from slow cooker and pour into a bowl. Add cornstarch and whisk until smooth. Return broth mixture to slow cooker and gently stir. Add in broccoli pieces. Cover slow cooker with lid then increase to high heat and cook 20 minutes longer, or until broccoli is tender and sauce has slightly thickened. Remove onion pieces. Serve warm over white or brown rice. Sprinkle seeds, if desired.
